For those of you who don't know or know of Ivan, he is Ivan Pahk, head chef for Sansei Restaurants on Maui. Born and raised on the North Shore of Oahu and, to the amazement of all who have dined at Sansei, has no formal training! He's a wildman, in his early forties who, when asked what's something most people don't know about him, responds that he served
in Desert Storm.
